INGREDIENTS:
2-eggs, well beaten
9 slices white bread, crusts removed, cut into 1/2 inch pieces 4Tb butter, cut into cubes
3 cups milk
6 scallions, chopped with green tops
1/4 cup chopped pimiento
21b. bulk sausage, browned, drained, and crumbled
2 cups grated cheddar cheese
1 tsp. salt
1/4 tsp. fresh ground pepper
INSTRUCTIONS:
Combine all ingredients in a large bowl and blend well. Pour mixture into a buttered 9 by 13 inch casserole dish and refrigerate, covered for 8 hours or overnight. Return to room temperature before baking at 300 degree for 1 hour. Serve immediately.

INGREDIENTS:
1 bag (30 oz.) frozen country-style hash browns I can (I 0314 oz.) cream of chicken soup
1 cup sour cream
1/2 stick salted butter, melted
2 cups shredded sharp cheddar cheese
1/2 cup onion, diced small
1 teaspoon sea salt
1/2 teaspoon black pepper
1 cup crushed corn flakes
11/2 sticks UNSALTED butter, melted
INSTRUCTIONS:
Mix the first eight ingredients thoroughly. Spread evenly in a buttered 9Xl2 baking pan or in individual dishes. Mix the corn flakes and unsalted butter. Distribute evenly on top of the potatoes. Bake at 350 degrees for 60 to 70 minutes, until golden brown and bubbly. Let stand for 5 minutes and serve.

INGREDIENTS:
5 Lg. onions sliced
1/4 cup margarine
1 tube Ritz crackers, crumbled
8 oz. shredded Mozzarella cheese
INSTRUCTIONS:
Sauté onions in margarine till clear. Layer onions, crackers, and cheese in 3 layers in a casserole dish. Bake at 350 degrees for 30 min.

INGREDIENTS:
12 eggs, beaten
4 Tbs butter
3 cups of milk
2 cup shredded Jack cheese
Vegetables to cut into bite size pieces:
broccoli, tomatoes, onions, green pepper, and any other produce you wish to use
INSTRUCTIONS
mix cut vegetable together and spread into two buttered 9 by l3 baking dishes
Mix eggs, milk, and cheese together and pour over vegetables. Bake in 350 degree oven for 45 to 50 minutes
